Preheat the oven to 350 degrees. Coat a 6-cup muffin tin with nonstick cooking spray.
Between 2 pieces of wax paper, gently pound the chicken with a mallet or rolling pin to 1/4-inch thickness. Season the chicken breasts with salt and pepper, then place a slice of ham on top of chicken breast. Evenly sprinkle with cheese and roll up tightly, tucking in the sides as you roll.
Place the rolls seam side down in the cups of the muffin tin. Sprinkle with bread crumbs and paprika.
Bake for 25 to 30 minutes, or until no pink remains in the chicken and its juices run clear. Serve immediately.
